My approach to cooking:  This can be summed up in one line – it’s how I want to eat.  And if I can’t find it, I make it.  Just as I describe on my home page, we are all unique and how we eat is a huge chunk of our individual-ness. For example, I choose to use no dairy from COWS – but I do use Goat products.  I have found that goat yogurts, cheeses, etc. do not cause me or my family any digestive issues – not to mention, goats, for the most part are not fed GMO grains, and thrive on a diet based on variety of vegetables and grasses.  In addition, I do not use gluten  in my recipes (or keep to trace amounts) – again, another ingredient that does not digest well for me and my family.  You will also see a trace amount of sugar.  I bend towards whole, organic, real foods – not processed or at least minimally processed.  I have found this approach to work for me – however, you may have no issues (digestive wise) with the ingredients I do not use.  Feel free to substitute out – but I cannot guarantee the outcome, as I may not have tested it.  If you are curious about a substitute or need a little guidance on a recipe, feel free to email me anytime at ann@eatwellthrive.com.  I will do my best to get back to you!

White Chicken Chili

This version of my chili-cook-off winning recipe is much easier on the arteries and GI tract. Made with two types of green chilies and a load of garlic - perfect for that inevitable Super Bowl Commercial viewing party!

Trail Mix Protein Chunks

These are delicious and super easy to make and pack a serious crunch. They are full of nutrients and protein. A great source of fuel before working out or doing your favorite activity OR to get you through that tough part of the day when blood sugar tends to drop – typically between 3-5 pm. You will be getting a good boost of protein, complex carbohydrates and little to no added sugar.

Lentil Bruschetta Salad

This salad comes together quick and easy. If you have a premium olive oil on hand, this is a great time to use it. Make this for lunch or dinner along side some whole grain baguette and you will not be disappointed. Even my picky “you know, I don’t love salads” son liked it!

Roasted Red Peppers

These really should be called Intoxicating Grilled Peppers of the Gods - but ya know, some names are hard to unstick, so Roasted Red Peppers remains. Regardless of what you call them, they are one my all-time favorite things to make. We eat them on grilled gluten free bread, gluten free bread with goat cheese, over grilled chicken, squeezed into a lasagna layer – the list goes on. Believe me, they are worth the effort.

Red Pesto Pasta with Arugula and Sausage

This recipe pops with flavor and brings together some unexpected textures for a make again and again main dish.

Pumpkin Oatmeal Protein Bites

These are a great replacement for protein bars. Not only do they have a good dose of protein, they have a good amount of fiber.

Power Balls

We live on these suckers. These are excellent sources of fuel for your pre-workout or activity of choice. Full of protein, healthy fats, and minimal sugar. Or they are perfect for mid-to-late afternoon snack. ONE ball, that is.

Iberian Tuna Salad

Such great refreshing salad and super easy to throw together. Add more veggies if you like or make as is. Not to mention a nice dose of protein between the tuna and the chickpeas.

Granola - Dark Chocolate Nut Butter Bites

These little gems are insanely delicious, but what is even better is they are not-to-sweet, but indulgent dessert option. Not to mention the flavanols and a dose of healthy grains and fats.

Curried Brown Rice with Ground Turkey, Pine Nuts and Currants

This is a great meal prep dish. It is versatile- can be used as main for lunch or dinner or in a smaller serving size, as a snack. Its full of both fiber and protein, and not a budget buster.
